Fun, spooky wrap slices layered with rainbow veggies and creamy hummus—make adorable "mummies" with olive eyes for a festive Halloween lunch!

Ingredients
  

  • 4 large whole grain tortillas
  • 1 cup hummus
  • 1 cup shredded carrots
  • 1 cup baby spinach
  • 1/2 cup shredded red cabbage
  • 1/2 red bell pepper thinly sliced
  • Sliced black olives
  • Extra tortillas to cut strips for mummy bandages optional

Instructions
 

  • Spread each tortilla generously with hummus.
  • Lay veggies in rows for a rainbow look. Roll each wrap tightly and slice into 2-inch rounds.
  • Cut extra tortillas into thin strips. Place strips crisscrossed on cut rounds to make "mummy wrappings".
  • Dot each mummy with two olive slices for eyes.
  • Arrange on platter and serve to ghouls and goblins!
