  • 4 sausages about 1 lb, any variety
  • 3 bell peppers sliced
  • 1 large onion sliced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • chopped parsley red chili flakes
  • cooked potatoes or zucchini sliced

Focus on sweet Italian sausage to maximize flavor with minimal extra seasoning.

Instructions
 

  •  Prep and Preheat
    Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup (the *clever* part!). Slice the sausage, peppers, and onion.
  •  Toss and SeasonIn a large bowl, combine the sliced sausage, peppers, and onions. Drizzle with 2 tablespoons of olive oil. Add the garlic powder, Italian seasoning, salt, and pepper. Toss everything together until the vegetables and sausage are evenly coated.
  •  Roast and Serve
    Spread the mixture in a single layer on the prepared baking sheet (do not overcrowd). Roast for 25 to 30 minutes, stirring halfway through, until the sausage is browned and cooked through and the vegetables are tender. Serve immediately on hoagie rolls, over rice, or alongside a simple green salad.

Notes

Clever Customization Tips

  • Add Starch:  For a complete meal on the pan, chop 2 large **potatoes** (or sweet potatoes) into 1-inch cubes and toss them with the other ingredients before roasting. (Increase baking time to 40-45 mins.)
  •  Heat It Up: Use hot Italian sausage and add a pinch of **red pepper flakes** to the oil for an extra kick.
  • Toppings:  Sprinkle with freshly grated **Parmesan cheese** during the last 5 minutes of roasting for an extra layer of savory flavor.
